To me, Thomas Pit BBQ in Madison, Alabama has the very best old style BBQ PORK ribs. They slow cook the ribs in a large, enclosed pit fueled by pure HICKORY wood. The ribs are not covered with any rub or paste and cooked for several hours.

The ribs are "lightly" coated with a mild vinegary sauce, cooked slow, and then chopped into "single" ribs for easy eating. The HICKORY WOOD flavor is very obvious with no vinegar aftertaste whatsoever.

The ribs are large, juicy, and well complimented with local cole slaw, potato salad, steak fries, and toasted butter bread.

Thomas Pit BBQ is a family owned business that has existed for well over 50+ years in the same location and is well known in the local North Alabama area.
