Skillet Cornbread Recipe For the Grill

Have you ever tried a Skillet Cornbread Recipe designed just for the grill? Here's a really simple and good recipe that will give you a new idea for the grill and outdoor cooking.

This recipe works best with a gas grill because you can control the heat better, and it gets less smoke. But use a charcoal grill if if you think you can handle it.


Grilled Skillet Cornbread

INGREDIENTS:
2 cups corn meal
3/4 cup water
1 medium onion, diced
1 tablespoon vegetable oil
1/2 teaspoon salt

DIRECTIONS:
Mix together the corn meal, onion, salt, and enough water to make a thick batter that will still pour. Let rest. Preheat your grill to medium. Place an iron skillet on the grill for about 10 minutes until hot. Add the vegetable oil and coat the bottom and sides of the pan.

Pour the prepared batter into the skillet. Lower the fire to low and cook covered. When the edges are golden brown check with a toothpick to see if it's done in the middle. If not, move to the top rack so it gets less heat so it'll cook in the middle without burning the outside. Keep checking the cornbread regularly so it doesn't burn.
