Smoked Pork Tenderloin
INGREDIENTS: 1 1/2 to 2 pound pork tenderloin 1 cup apricot nectar 1/2 cup apple cider 1 clove garlic, minced 2 tablespoons soy sauce 2 teaspoons vinegar 1 tablespoon brown sugar 1/2 teaspoon allspice 1/4 teaspoon ground ginger 1 tablespoon whole cloves
DIRECTIONS: Pierce meat with a fork all over. In a saucepan combine remaining ingredients and heat until sugar is dissolved. Place meat in a glass bowl or plastic bag and add marinade. Refrigerate overnight in marinade.
Remove meat from marinade and place on smoker grill. Pour remaining marinade into smoker's water pan.
Charcoal: Use 5 pounds charcoal, 3 quarts hot water, 2 wood sticks and smoke 2-3 hours.
Electric: Use 3 quarts hot water, 2 wood sticks and smoke 2�3 hours.

Smokey Honey Tenderloin Skillet
INGREDIENTS: 3 tablespoons butter 1 smoked pork tenderloin, cut into 2-inch slices 4 medium carrots, sliced in 1-inch pieces 3 celery stalks, sliced in 1-inch pieces 1 small onion, thinly sliced 3 tablespoons honey 2 tablespoons lemon juice 1/2 teaspoon finely chopped fresh garlic 1/2 teaspoon ground ginger 1/4 teaspoon salt 1/4 teaspoon dried sage leaves 1/4 teaspoon pepper 1/4 teaspoon dried sage leaves
In a large skillet melt butter. Add pork tenderloin slices and the carrots. Cook over medium-high heat, stirring occasionally, until meat has a nice brown crust on each side.
Stir in all remaining ingredients. Lower heat and cover. Simmer, stirring occasionally, until vegetables are done(8-10 minutes).
