Fresh Chunky Salsa

INGREDIENTS:
1 serrano or jalapeno pepper, seeds removed and minced
6 medium fresh tomatoes, chopped 1 medium red onion chopped
3 green onions sliced thin with tops included
1/8 cup finely chopped cilantro
1/4 teaspoon cumin powder
1/2 teaspoon chili powder
1 teaspoon oregano
1/4 teaspoon garlic powder
1 4-ounce can chopped mild green chiles
1 8-ounce can tomato sauce
2 tablespoons red wine vinegar
Salt and pepper to taste

DIRECTIONS:
Combine the tomatoes, red onion, green onions, serrano chile, cilantro, cumin, chili powder, oregano, garlic powder, tomato sauce, green chiles, red wine vinegar, salt, and pepper. Leave overnight to let flavors blend together.


Baby's Favorite Hot Sauce Fresh Corn Salsa

INGREDIENTS:
1 cup fresh corn (about 2 ears)
1 large seeded and chopped tomato chopped
2/3 cup chopped red onion
1/2 cup chopped fresh cilantro
2 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon ground cumin
1 minced and seeded jalape�o pepper
1 peeled and chopped avocado
2 tablespoons fresh cilantro

Mix all ingredients together in a large bowl, cover and chill before serving.


Pico De Gallo Salsa

INGREDIENTS: 2 cloves garlic
1/2 medium-size onion
2 seeded and deveined jalapeno peppers
1 pound ripe plum tomatoes, seeded
2 tablespoons salad oil
lime juice from 1 lime
salt and pepper

INSTRUCTIONS:
Mince garlic, onion and jalapeno. Finely chop cilantro and dice tomatoes. Mix together in a nonmetallic bowl. Add oil and lime juice. Season to taste with salt and pepper, if desired.


This green salsa goes great on top of grilled chicken.

Green Salsa Fresca

INGREDIENTS:
12 ounces Mexican tomatillos(green Mexican tomatoes)
1/2 small onion, chopped
1 clove garlic, minced
1 tablespoon chopped cilantro 1 minced jalapeno pepper, seeds and membrane removed
1/4 teaspoon ground cumin
1/8 teaspoon sugar
Salt, to taste

INSTRUCTIONS:
Remove husks from tomatillos. Simmer in water to cover in large saucepan 5 to 8 minutes until tender.

Place tomatoes, onions, garlic, cilantro, jalapeno chilies, cumin and sugar in a food processor. Pulse until almost fairly smooth, but leave some chuunks. Serve.


As you have seen, there is nothing difficult about any homemade salsa recipe. They can be ready made ahead of time and stored in the refridgerator. And almost any homemade salsa can be used to accompany various grilled meats and other foods, or used as a dip for tortilla chips.
